A simple, colorful breakfast bowl with organic goji berries as the main ingredient. Dairy-free, no cooking required, ready in 10 minutes. A breakfast recipe where the goji berries are briefly soaked first: this makes them softer, releases more flavor and makes the soaking water usable as a light berry syrup over the bowl. Ready in 15 minutes, dairy-free and with a beautiful color contrast between the red berries and the white fruit.

Goji breakfast bowl with oatmeal, apple and walnuts

Ingredients

  • 3 el goji bessen
  • 200 g haver (gerolde havervlokken)
  • 300 ml haver- of amandelmelk
  • 1 rijpe banaan in plakjes
  • 1 appel in dunne partjes
  • 2 el honing of ahornsiroop
  • 1 tl kaneel ceylon gemalen
  • 2 el walnoten of amandelen grof gehakt
  • 1 tl gemberpoeder

    Soak goji berries: Place 3 tbsp organic goji berries in a small bowl and add 3 tbsp lukewarm water. Let soak for 10 minutes. The berries will swell and become softer in texture, which benefits both the taste and digestibility. Keep the soaking water.

    Prepare oatmeal: Gently bring 300 ml oat milk or almond milk to a boil in a saucepan. Add 200 g oats (rolled oatflakes), 1 tsp cinnamon powder and optionally 1 tsp organic ginger powder (optional) and stir well. Let simmer on low heat for 3 to 5 minutes and stir regularly, until the oats have absorbed the milk and have a creamy consistency.

    Assemble the bowl: Scoop the oatmeal into two deep bowls. Distribute 1 ripe banana, sliced and 1 apple, cut into thin slices over the bowls. Place the soaked 3 tbsp organic goji berries on top along with a splash of soaking water: the soaking water tastes slightly sweet and berry-like and acts as a natural sauce over the bowl.

    Garnish and serve: Sprinkle 2 tbsp walnuts or almonds, roughly chopped over the bowls for extra bite and a nutty flavor. Drizzle with 2 tbsp honey or maple syrup to taste. Serve immediately.

Tips

  • Variations: replace the oats with buckwheat for a gluten-free version. Add a tablespoon of chia seeds to the oatmeal while soaking for extra binding and nutrients.
  • Soak goji berries: soak the goji berries the night before in 3 tablespoons of water. The berries swell up, become softer and release their sweet, berry-like flavor into the soaking water, which you can then also pour over the bowl as a light syrup.
  • Color boost: add half a teaspoon of organic barley grass powder to the oatmeal for a green color and an extra vitality boost. The sweet goji berries temper the grassy taste of the barley grass.
