The dry rub steak: organic steak spice mix in the pan

A dry rub steak doesn't require complicated technique, but it does need a few basic rules: good meat, a hot pan and the time to let the crust do its work. This recipe works with our organic steak spice mix and is deliberately kept simple, so that the flavor of the meat and the spices take center stage.

Ingredients

  • 2 steaks of biefstukken
  • 2 à 3 tl steak kruiden
  • 1 el olijfolie of geklaarde boter
  • 1 takje rozemarijn of tijm

Cook Time

    Remove the meat from the refrigerator 30 minutes before cooking and let it come to room temperature: cold meat gives an unevenly cooked result.

    Generously sprinkle both sides of the steak with the spice mix and rub the spices lightly into the meat. Let rest for 20 to 30 minutes so the flavors begin to penetrate.

    Heat a heavy cast iron or stainless steel pan on high heat until the pan is hot. Add the oil or clarified butter and let warm briefly.

    Place the steak in the pan and cook without moving: 2 to 3 minutes per side for medium-rare, longer for desired doneness. Do not press the meat while cooking.

    In the last minute, optionally add a sprig of rosemary or thyme and spoon the pan butter over the meat.

    Remove the steak from the pan and let rest for 5 minutes on a warm plate, covered with aluminum foil: the juices redistribute and the meat becomes more tender.

    Slice across the grain and serve immediately.
