Rose Lemonade with Honey and Lemon Balm
This recipe uses dried organic rose petals for a simple, refined lemonade that you can serve both warm and cold. The lemon balm adds a fresh green note that balances the floral sweetness of the rose.

1Heat the water to 90°C (do not bring to a full boil, to preserve the aromatic compounds).

2Add the rose petals and lemon balm. Let steep for 8 to 10 minutes with a lid on the pitcher.

3Strain out the herbs.

4Stir the honey through the still warm infusion until completely dissolved.

5Add the lemon juice and let cool completely.

6Serve over ice cubes and optionally finish with a sprig of fresh mint.

7Replace lemon balm with hibiscus for a deeper color and a more tart flavor.

8The lemonade keeps refrigerated for up to 2 days.
