Mediterranean fish soup with cayenne pepper
Fish soup with cayenne pepper organic. Ready in 40 minutes. With white fish, shrimp, fennel and orange. Spicy and aromatic.

Ingredients
- 600 g stevige witte vis (kabeljauw, zeebaars, heilbot)
- 200 g gepelde garnalen
- 1 stuks ui gesnipperd
- 3 teentjes knoflook fijngehakt
- 2 stengels selder in stukken
- 1 stuks venkel in plakjes
- 400 g gepelde tomaten (blik)
- 200 ml droge witte wijn
- 800 ml visbouillon
- 1/2 tl cayennepeper
- 1 tl paprikapoeder
- 1 tl komijn
- 1/2 sinaasappel sap en rasp
- 3 el olijfolie extra vierge
- 1 bosje peterselie of basilicum
- 1 snuif zeezout

1Heat the olive oil in a large pan over medium-high heat. Sauté the onion, celery and fennel for 5 minutes until soft.

2Add the garlic, cayenne pepper, paprika powder and cumin and cook for 1 minute.

3Deglaze with the white wine and let it reduce for 2 minutes.

4Add the peeled tomatoes, fish stock, orange zest and orange juice. Bring to a boil and simmer gently for 10 minutes.

5Add the fish chunks and simmer gently for 5 minutes.

6Add the shrimp at the end.

7Taste and season with salt. Garnish with fresh parsley or basil.
Tips
- Serve with a slice of toasted bread and a spoonful of harissa for an extra spicy touch.
- Replace the white wine with extra fish stock for an alcohol-free version.
- Add mussels or cockles in the last 5 minutes for a richer seafood variant.
