Homemade red lingonberry compote with cardamom
Red lingonberry compote is a basic recipe in Scandinavian cuisine that goes well with almost everything: with game and poultry, through yogurt, on oatmeal or as a filling in pastries.

Ingredients
- 100 g rode bosbes
- 200 ml water
- 1 el honing of ahornsiroop
- 1/4 tl kardemomzaadjes
- 1/2 citroen sap

1Soak the dried red lingonberries for 30 minutes in the water so they swell and soften.

2Bring the berries together with the soaking water and the cardamom to a boil over low heat.

3Let simmer gently for 10 to 15 minutes until the berries burst and the liquid thickens slightly. Stir occasionally.

4Remove from heat and stir in the honey or maple syrup and lemon juice.

5Let cool and store in a sterilized glass jar in the refrigerator.
