Pho is a Vietnamese noodle soup where the strength lies entirely in the broth: clear, deep in flavor and aromatic from a handful of spices. Star anise is essential in this.

Homemade pho broth with organic star anise

Ingredients

  • 1,5 l rundsbouillon
  • 2 steranijs bio
  • 1 stuks kaneelstok
  • 3 stuks kruidnagel bio
  • 1 stuk verse gember 3 cm
  • 1 ui gehalveerd en drooggebakken in pan zonder vet
  • 2 el vissaus of tamari
  • 1 tl rietsuiker
  • zeezout
  • 200 g rijstnoedels plat, breed type
  • 200 g dungesneden rundsvlees of tofu
  • 1 handvol verse tauge
  • verse munt, thaise basilicum of koriander
  • limoenschijfjes

    Dry fry the halved onion in a hot pan without fat until the cut surfaces are lightly charred, approximately 3 to 4 minutes. This gives the broth color and a lightly roasted aroma.

    Pour the broth into a spacious pot and add the star anise, cinnamon stick, cloves and ginger. Bring to a boil.

    Add the dry-fried onion, fish sauce or tamari and sugar. Lower the heat and let it gently simmer for 25 minutes without a lid.

    Strain the broth and taste: add salt or an extra splash of fish sauce if needed.

    In the meantime, prepare the rice noodles according to the instructions on the package and distribute them over deep bowls.

    Place the meat or tofu on top of the noodles and pour the hot broth over it: the heat of the broth cooks the thinly sliced raw beef in place.

    Garnish with bean sprouts, fresh herbs and a slice of lime. Serve immediately.
