Oatmeal with chokeberry, walnuts and honey
The chokeberry (Aronia melanocarpa) is still relatively unknown in Belgium, but in Poland and Eastern Europe the berry has been a staple in traditional food for decades. The berry has a high concentration of polyphenols and vitamin C. Dried chokeberries are versatile in the kitchen and can be processed raw as well as in warm preparations. In this recipe we make an oatmeal porridge with dried chokeberries, nuts and honey: a simple breakfast that you can put on the table in less than a quarter of an hour.

Ingredients
- 160 g havermout
- 500 ml plantaardige melk of water
- 30 g appelbessen
- 30 g walnoten grof gehakt
- 1 el honing
- 1 stuks kaneelstokken
- 1 snuifje zeezout

1Bring the milk together with the cinnamon stick and a pinch of salt to a boil on medium heat.

2Add the oatmeal and stir regularly. Let simmer gently for 5 to 7 minutes until the desired thickness is reached.

3Remove the cinnamon stick. Scoop the oatmeal into bowls.

4Distribute the dried chokeberries and chopped walnuts over it.

5Drizzle with honey or maple syrup and serve immediately.
Tips
- Soak the chokeberries overnight in water or orange juice for a softer texture and milder flavor.
- Replace the walnuts with hazelnuts or pumpkin seeds for variation.
- The oatmeal also tastes good cold as overnight oats: mix all ingredients the evening before and store overnight in the refrigerator.
