A classic gyros marinade based on organic gyros spice mix. Vegetables and chickpeas front and center, served in pita bread with homemade tzatziki made from coconut yogurt. Vegetables and chickpeas as the base, with a homemade tzatziki that also works with coconut yogurt. The marinade does the work: at least 2 hours, preferably overnight.

- 2 stuks courgette in reepjes 1 cm
- 400 g kikkererwten (blik) gespeld en gedroogd
- 4 stuks pitabroodjes

- 1/2 komkommer geraspt en uitgeknepen
- 1 teentje knoflook zeer fijn gesneden(tzatziki)
- 1 handvol peterselie of verse munt
- 2 tomaten in partjes
- 1/2 rode ui in dunne ringen
Cook Time
-
1Make the marinade: Mix 2 tbsp organic gyros spice mix, 5 tbsp olive oil, 1 lemon, juice and zest, 2 cloves garlic, minced and 0.5 tsp sea salt in a large bowl until smooth. The lemon zest enhances the fresh tone of the coriander in the mix; the juice provides acidity that balances the flavors and tenderizes the meat or vegetables.
-
2Marinate: Add 1 eggplant, cut into 1 cm strips, 2 courgettes, cut into 1 cm strips and 400 g canned chickpeas, rinsed and patted dry to the marinade and mix well so everything is evenly coated. Cover and let marinate for at least 2 hours in the refrigerator. For deeper flavor: marinate overnight.
-
3Prepare tzatziki: Mix 200 g coconut yogurt or regular yogurt, 0.5 cucumber, grated and squeezed, 1 clove garlic, very finely chopped (for tzatziki) and half of 1 handful of fresh mint or parsley, finely chopped in a bowl. Season with a pinch of salt and a splash of lemon juice. Let the tzatziki rest in the refrigerator for at least 15 minutes so the flavors can infuse. Squeezed cucumber is essential: excess moisture makes the tzatziki too thin.
-
4Grill vegetables and chickpeas: Heat a grill pan or barbecue on high heat. Grill the vegetables for 3 to 4 minutes per side. Put the chickpeas separately in a grill basket or grill pan and roast for 5 minutes, stirring regularly, until lightly crispy.
-
5Assemble and serve: Briefly warm 4 pita breads on the grill or in a dry pan. Spread tzatziki generously on the pita bread. Distribute the grilled vegetables and chickpeas, add 2 tomatoes, cut into wedges and 0.5 red onion, in thin rings and sprinkle with the rest of 1 handful of fresh mint or parsley, finely chopped. Fold the bread together or serve open.
Tips
- Variations: add sweet potato or pumpkin chunks to the marinade for a more filling winter version. Cauliflower florets also work excellently: the gyros spice mix adheres well to the raw texture of cauliflower.
- Dairy-free tzatziki: use coconut yogurt or soy yogurt. Squeeze the cucumber well before use: excess moisture makes the tzatziki too thin.
- Oven variant: place the marinated vegetables and chickpeas on a baking sheet lined with parchment paper. Roast at 220°C (fan oven) for 25 minutes, the last 5 minutes under the grill for a lightly roasted effect.
- Warm the pita breads for the last 2 minutes on the grill or in a dry frying pan for extra flavor and a lightly crispy crust.
