Green rooibos iced tea with cucumber and mint
A cold infusion of green rooibos is lighter and fresher than that of red rooibos and is excellent as a base for a refreshing iced tea.

Ingredients
- 4 tl rooibos groen
- 1 l water (80°)
- 1/2 komkommer in plakjes
- 1 handvol verse muntblaadjes
- 1 citroen sap
- 1 el honing of ahornsiroop
- ijsblokjes naar smaak

1Pour water at 80 to 85 °C over the green rooibos and let it steep for 7 minutes. Strain and let the infusion cool completely to room temperature.

2Stir the honey or maple syrup into the still warm infusion so it dissolves well.

3Add the cucumber slices, mint leaves and lemon juice to the cooled infusion.

4Let it steep in the refrigerator for at least 30 minutes so the flavors can properly infuse into the liquid.

5Pour over ice cubes in tall glasses and garnish with a sprig of mint and a slice of cucumber.
