A basic tomato sauce that works as a pasta sauce, pizza base or dipping sauce. With organic pizza herbs as the only herb mix: quick, aromatic and versatile.

Simple tomato sauce with organic pizza herbs

Ingredients

  • 800 g peeled tomatoes (canned)
  • 2 tsp pizza seasoning
  • 1 onion finely chopped
  • 2 cloves garlic finely minced
  • 3 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1 tsp sugar or honey
  • 400 g pasta

    Sauté onion and garlic: Heat 3 tbsp extra virgin olive oil over medium-high heat in a large pan. Sauté 1 onion, finely chopped until translucent in 3 to 4 minutes. Add 2 garlic cloves, finely chopped and cook for another 1 minute until soft but not colored.

    Add tomatoes: Add 800 g peeled tomatoes (canned) and crush the tomatoes roughly with a wooden spoon or potato masher. Stir everything well. Add 1 tsp sea salt and 1 tsp sugar or honey the sugar or honey neutralizes the natural acidity of the tomatoes.

    Add herbs and reduce: Add 2 tsp organic pizza herbs and stir through. Let the sauce simmer gently over low heat for 20 minutes without a lid, so the liquid evaporates and the flavors concentrate. Stir occasionally.

    Cook pasta: Cook 400 g pasta (spaghetti or penne) in plenty of salted water according to package directions until al dente. Reserve a splash of cooking water before draining the pasta.

    Finish and serve: Taste the sauce and season to taste. Toss the pasta with the sauce and add a splash of cooking water if needed to bind the sauce. Serve immediately, optionally with grated Parmesan and a drizzle of olive oil.

    As pizza base: let the sauce reduce a bit longer to a thicker consistency. Do not season further with extra salt if you use the sauce on pizza, as cheese already adds salt.

    Freezing: this sauce freezes well in 200 ml portions. Keeps for up to 3 months in the freezer.

    More depth: a splash of red wine or an anchovy fillet cooked with the onion adds extra umami without tasting the wine or anchovy in the final result.
