Chia pudding with mango and coconut
Chia seeds (Salvia hispanica) are one of the most versatile seeds in the kitchen. Thanks to their ability to absorb moisture and form a gel, they are the basis of one of the simplest and most nutritious desserts: chia pudding. In this recipe, we combine chia seeds with coconut milk and fresh mango for a fresh, tropical dessert that is prepared the evening before and ready in the morning.

Ingredients
- 6 el chiazaad
- 400 ml kokosmelk
- 1 el honing
- 1 rijpe mango
- 4 el kokosschilfers
- 1 scheutje limoensap

1Mix the chia seeds with the coconut milk and honey in a bowl or pot. Stir well so the seeds are evenly distributed.

2Cover and refrigerate for at least 4 hours, preferably overnight.

3Stir well again before serving: the pudding should be thick and creamy.

4Divide between two glasses or bowls. Top with the mango chunks.

5Sprinkle the roasted coconut flakes on top and add a splash of lime juice to taste.

- Replace the mango with passion fruit, strawberry or berries for a different flavor combination.
