Chia seeds (Salvia hispanica) are one of the most versatile seeds in the kitchen. Thanks to their ability to absorb moisture and form a gel, they are the basis of one of the simplest and most nutritious desserts: chia pudding. In this recipe, we combine chia seeds with coconut milk and fresh mango for a fresh, tropical dessert that is prepared the evening before and ready in the morning.

Ingredients

  • 6 el chiazaad
  • 400 ml kokosmelk
  • 1 el honing
  • 1 rijpe mango
  • 4 el kokosschilfers
  • 1 scheutje limoensap

    Mix the chia seeds with the coconut milk and honey in a bowl or pot. Stir well so the seeds are evenly distributed.

    Cover and refrigerate for at least 4 hours, preferably overnight.

    Stir well again before serving: the pudding should be thick and creamy.

    Divide between two glasses or bowls. Top with the mango chunks.

Tips
