What is Oolong tea ?

Oolong tea is a traditional Chinese tea. This tea is made from the leaves of Camellia sinensis. That, by the way, is the same plant used to make green tea and black tea. The difference is in the way the tea is processed. The oxidation process creates green, dark or oolong tea. Green tea is made from fresh tea leaves that have not undergone oxidation, a chemical reaction that begins when the leaves are exposed to air and is responsible for the color and flavor of different types of tea. Black tea is made when the leaves are completely crushed to improve oxidation. Oolong is made when the leaves wilt in the sun and are lightly bruised to create partial oxidation. So Oolong tea is actually a step between Green and Black tea. Oolong tea has a pleasant sweet fragrance, a nutty character and is very flavorful.
